This Valentine’s day treat your special someone to a special chocolate treat. I love chocolate, and I don’t want to give it up on Valentine’s day. Now give me a treat that has some health benefit, and I’m a happy girl. These chocolate nut clusters are a decadent treat you can feel pretty good about eating.
How can something so chocolatey be somewhat healthy? Raw nuts and no added sugar. Just lovely dark chocolate. Can you eat a pound? No. One or two chocolate nut clusters at a time is all you need…this isn’t a low calorie treat at all! But if you use high-quality ingredients, one or two is all you’ll crave.
These are super easy to make; all it takes is a slow cooker. If you don’t have one, you could use the stove top at the lowest temperature. Just keep your eye on so the chocolate doesn’t burn.
Happy Valentine’s Day!
Recipe: Chocolate Nut Clusters
Summary: A decadent and (reasonably) healthy treat.
- 16 oz 80% or higher cocoa, broken into small pieces
- 2 squares unsweetened chocolate, broken into pieces.
- 12 to 16-oz raw almonds
- 12 to 16-oz raw walnuts pieces
- 1/2 tsp sea salt
- Place chocolate, nuts and salt in slow cooker on low in order listed above. Cover. Cook for 2 hours. Stir. Drop by spoonfuls onto waxed paper or foil.
The higher the percentage of cocoa, the lower the sugar. I use 80% or higher so it’s a little sweet, but not too sweet.
